Our Philosophy:
Omakase is a Japanese phrase, loosely translated as "I leave it up to you." When uttered at a sushi bar, it alerts the chef that one would like the menu of the day, or "chef's choice." At Omakase, we strive to incorporate this philosophy of seasonal creativity into our food, while providing our customers with the finest in-home preparation in the area. We place a high premium on traditional ingredients and techniques, but still allow you the ultimate freedom of expression--enabling our clients to choose from a wide range of Asian specialties and genres. From sushi to pot stickers, Omakase is Park City's finest privately prepared Pacific Rim cuisine.
Chef and Owner, Matt Fischer:
Chef Matt Fischer moved to Park City in the fall of 1999, as a ski bum. That spring, after spending season as a server, he was granted the opportunity to apprentice under the sushi chefs at Kampai--then Main Street's premier sushi bar. Building on the foundation of his previous restaurant experience, Chef Fischer moved quickly up the totem of Park City's growing sushi scene, and in 2001 was sought out to aid in the opening of The Blind Dog Sushi Bar.
Following on the sustained success of Blind Dog, he proceeded to aid in the opening of 4 more sushi restaurants over the next decade and a half. Consequently Chef Fischer's work at Nikai (in Jackson Hole, WY), Sushi Maru, and Yuki Arashi (now Yuki Yama), Tsunami South Jordan, and the new Blind Dog location not only established his reputation as one of Park City's premier creative culinary talents. Soon, however, his desire for variety and love of creative cooking drove him from behind the sushi bar, into the arena of private preparation--and Omakase was born. Over the past 6 years—splitting time between Omakase and managing the sushi bar at Shabu Restaurant and Sake Bar—he continued to expand the local horizon of Asian-American cooking. Fischer's unique personal culinary history, sculpted by both his Korean and midwestern heritage, afford him a special ability to combine inventive wide-ranging flavors with the refined classical Japanese lexicon.
